Can't Wait To Have Capons Again?

Sunshine Capons will be available again on Saturday, at the Bonsai Show, Araneta Gateway.

The heat is too much for most of us, so it was decided that we ihaw the capons in the afternoon.

Experience the eating pleasure of what Zac Sarian had been raving about :)

Inihaw Sunshine Chicken Capon



Joey Rigor of Victoria, Tarlac, our Sunshine Capon grower brought live and dressed capons to the Bonsai show yesterday.

Close to 90days, the capons were about 3-3.5 kilos in dressed weights. The dressed were chopped at the site and seasoned simply with salt and pepper rub (just like how I do my regular inihaws). We believe that great tasting meat will standout with basic seasonings only.

Low fire, slow cooking. The charcoals were started and the Sunshine capons were set on the open grill as the right heat was achieved. See how the freshly dressed raw meat looks hefty?

You should have experienced the aroma. As Zac described to be "the kobe beef of poultry".... the marbled chicken meat was cooking in its own juices.

Looking at the meat, knowing that it is almost 90days old....not much expectation.

As the AANI people took the first bite, the expression on their eyes and faces have told me that Joey and Doc Mitzi did a great job! My friends from the US arrived and tasted. They can't understand how chicken can be that delicious.

Zac was late because of unforseen customers, traffic to Cubao and the strong rain. He missed the barbecue. In todays radio program, over breakfast...he had to be reassured that we will have Joey again at the Bonsai show and at IFEX....and YES, we will visit the farm :)

What's my favorite part of chickens? The tail or ass! OMG, I had to ask that it be cut and given to me. Hahahahhhahah....never had a mouthful of this! It was huge.

The initial shipment of caponizing sets have arrived in the Philippines.

SASSO Demos How To Capon A Sunshine

We missed Joey Rigor of Victoria, Tarlac who does the Sunshine Capon. It was his birthday, April 6. His Sunshine Capon triggered Zac Sarian's interest in bringing back the art.

Doc Rey also tried his hand at it.

DCS Trading, Rosales Pangasinan


This photo is the laugh of my day!

DCS Trading in Rosales, Pangasinan is a long standing dealer of ours.

On our way to Calasiao last Wednesday, I decided to take a photo of the store so I can post it here. Not a great one as the store was still closed before 7am, and I realized that the banner is too small when the dealer displays it up front. So I had no intentions of posting this photo until Danny calls me tonight.

He said "great cover for the Agricuture"...then he goes there is a story I have to know that will make me laugh. I butted in by saying I took a photo of the store...

That was the root of it all :)

I knew he has security cameras, but no big deal to me and I didn't think about it when taking pics. I saw several of his men go in and out as I was parked, but I just took pictures from the rolled down passenger window.

wehehehhehe They called LTO to verify. Of course my name came out as registered owner, but there was a typo so the name didn't register to him, plus of course he calls me by my nickname. They called NBI to tag the car and the name. Wow, good thing I used another car today lol.

Anyway, as he was reading the article in the Agriculture Magazine, our names were there and it dawned on him that it was me taking pictures, my car, no DCS stalker! Aside from the fact that he now saw the typo of the texted name to him, he realized that the plate was sort of personalized and he was able to equate datas.

That is the beauty of long relationships, there are many things you laugh about.

Sunshine Capons

Did it take rigorous brainstormings to decide to claim a niche in the caponed chicken sector?

I'm not sure how and why. I can only guesstimate and conjure like the "Marimar" writer :)

A Tarlac raiser decided to capon the male Sunshines. His harvest for March 2008 had been reserved and next batch will be for May 2008 already.

Great move. They not only unlearned the present norms in raising industrial broilers....they went back to basics with free ranged chickens, and took the step backward to bring back to consumers the long missed capons.

Unlearning, back to basics, backward, back.... Seems like negative thoughts? Not when you really dwell on the reasons.

What are capons?

As of now, they will be calling them Sunshine Capon.
