The statistics of the visitors in one's website tells you the profile of your readers. What they are searching for, what led them to you, the pages that get a lot of interest etc.
I make it a point to read my site stats. Today something caught my attention. Someone typed the keywords capon breeders in their search bar. It led them to this blog.
Capons are not bred. They are not a product of breeding. There are no parent stocks that gives us capons.
Capons are castrated male chickens. So, any male chicken may be a capon. They give you meat that is fat, tender and very flavorful.
This is an old art that is most sought after by people who know their chickens. Continue on searching and reading about this old practice.
To start with, since our Sunshines have that "native taste" it is a good product for your capons. It will be a good idea to focus on this niche in your area.
Grass Fed, Naturally Farmed, Pastured Chickens: Raised with a lot of sunshine, fresh air, supplemented with probiotics and unmedicated feeds..... Your healthy option for a back to basics lifestyle

Ready To Range Capons
One grower of ours have specialized on the Sunshine Capons, timing his harvests during the festival season of Christmas, town fiestas etc. Actually, the capons are served in special occassions and should know no particular season as it will always be demanded.
The gourmets know the distinct difference in meat quality of capons. Priced higher at PHP300/kilo dressed, it is sought after by the market that knows.
We have had inquiries about getting capon cockerels, or the ready to range ones.
Look into this business. It is a good niche for a select market.

Market For Capons
When we first featured Joey Rigor doing the Sunshine Capons, it got a lot of attention. That time, he was learning the curve for the business of the capons. Because he started sometime May, we were able to feature the old art of raising capons for several trade shows. By Christmas time, people have preordered Joey's capons :)
He has already in his brooders now capons for release in May.
Capons need not be just for Christmas. All year round, there will be a need for a festive dish :) There will always be parties, birthdays and anniversaries. Graduations and fiestas are also mid year.
I found this article, for people who don't know what capons are.

How Do I Cook It?
I took out three (3) capons to season and roast for tonight. Three...yes you read right! When there are ten (10) children in the family, spouses and grown up children, three capons might not even be enough :)
Salt, fresh black pepper from the mill, just pinched Rosemarie from my pots. That's it for my capons tonight. Will let them sit on marbled potatoes, and let their juice season the marbles as they bake with the Sunshines.
I can't stress enough: low fire, slow cooking :)

Organic Produce Need Not Be Expensive
Mr Zac Sarian and I were discussing about the Sunshine Capons, the old art of caponizing male chicks to come up with flavorful and huge, tender chickens.
One of our growers have started this early this year and had been sampled and introduced to the market in several trade shows we had joined.
Agrilink is another venue great to ask Joey and Mitzi Rigor to join us. We have actually started to book orders for December, but will have Sunshine Capons available also during the October show.
The conversation drifted to pricing....makes me think that led to this article :) And no...organic and natural farmed produce need not be expensive :) Read the online version.

Adobong Capon
Joey Capon...wehehehhe, yes, someone called Joey that name during IFEX....brought a tasty adobo from his Sunshine Capons.
I asked for the recipe, he texted it, but I lost it :(
Care to share a good recipe of Adobo for Capons?

Inihaw Sunshine Chicken Capon
Close to 90days, the capons were about 3-3.5 kilos in dressed weights. The dressed were chopped at the site and seasoned simply with salt and pepper rub (just like how I do my regular inihaws). We believe that great tasting meat will standout with basic seasonings only.
Low fire, slow cooking. The charcoals were started and the Sunshine capons were set on the open grill as the right heat was achieved. See how the freshly dressed raw meat looks hefty?
You should have experienced the aroma. As Zac described to be "the kobe beef of poultry".... the marbled chicken meat was cooking in its own juices.
Looking at the meat, knowing that it is almost 90days old....not much expectation.
As the AANI people took the first bite, the expression on their eyes and faces have told me that Joey and Doc Mitzi did a great job! My friends from the US arrived and tasted. They can't understand how chicken can be that delicious.
Zac was late because of unforseen customers, traffic to Cubao and the strong rain. He missed the barbecue. In todays radio program, over breakfast...he had to be reassured that we will have Joey again at the Bonsai show and at IFEX....and YES, we will visit the farm :)
What's my favorite part of chickens? The tail or ass! OMG, I had to ask that it be cut and given to me. Hahahahhhahah....never had a mouthful of this! It was huge.
Sunshine Capons are available to consumers. Check him out also at IFEX's Sunshine Chicken booth, May 16-18, SMX.

Bonsai Show Plus
Mark May 03-11, for the Bonsai Show at the Gateway Araneta Center. This Bonsai Show will be notable as tourism, agriculture, trainings and cultural activities are included. Agri Aqua Network International (AANI) will be coordinating this event.
There will be a seminar on Cooking W/ Herbs & Sunshine Chicken, May 7, 4-7pm.
We are looking forward to May... as we have two shows, this one and IFEX. What is most interesting is that Sunshine Capons will be available by then.
Joey Rigor's Sunshine Capons are not chemically treated. They employ the old art of caponizing :)
See you!

SASSO Demos How To Capon A Sunshine
We missed Joey Rigor of Victoria, Tarlac who does the Sunshine Capon. It was his birthday, April 6. His Sunshine Capon triggered Zac Sarian's interest in bringing back the art.
Doc Rey also tried his hand at it.
Demos by Louis Perrault of SASSO. Let's see if they get featured in an article :)
Sunshine Capons will be available at the Bonsai Show, May3-11 and at IFEX, May16-18.

DCS Trading, Rosales Pangasinan
This photo is the laugh of my day!
DCS Trading in Rosales, Pangasinan is a long standing dealer of ours.
On our way to Calasiao last Wednesday, I decided to take a photo of the store so I can post it here. Not a great one as the store was still closed before 7am, and I realized that the banner is too small when the dealer displays it up front. So I had no intentions of posting this photo until Danny calls me tonight.
He said "great cover for the Agricuture"...then he goes there is a story I have to know that will make me laugh. I butted in by saying I took a photo of the store...
That was the root of it all :)
I knew he has security cameras, but no big deal to me and I didn't think about it when taking pics. I saw several of his men go in and out as I was parked, but I just took pictures from the rolled down passenger window.
wehehehhehe They called LTO to verify. Of course my name came out as registered owner, but there was a typo so the name didn't register to him, plus of course he calls me by my nickname. They called NBI to tag the car and the name. Wow, good thing I used another car today lol.
Anyway, as he was reading the article in the Agriculture Magazine, our names were there and it dawned on him that it was me taking pictures, my car, no DCS stalker! Aside from the fact that he now saw the typo of the texted name to him, he realized that the plate was sort of personalized and he was able to equate datas.
That is the beauty of long relationships, there are many things you laugh about.
Joey Rigor who does the Sunshine Capons gets his stocks from DCS Trading. We should have Danny around when we visit the farm of Joey in Victoria, Tarlac to feature the capons.
See if DCS has fresh stocks.

Sunshine Capons
Did it take rigorous brainstormings to decide to claim a niche in the caponed chicken sector?
I'm not sure how and why. I can only guesstimate and conjure like the "Marimar" writer :)
A Tarlac raiser decided to capon the male Sunshines. His harvest for March 2008 had been reserved and next batch will be for May 2008 already.
Great move. They not only unlearned the present norms in raising industrial broilers....they went back to basics with free ranged chickens, and took the step backward to bring back to consumers the long missed capons.
Unlearning, back to basics, backward, back.... Seems like negative thoughts? Not when you really dwell on the reasons.
What are capons?
As of now, they will be calling them Sunshine Capon.
